SIMMONS BUILDING
The Simmons Building is the new home of our head office, roasterie, training lab, and state-of-the-art concept café. We proudly join two other local businesses, charbar and Sidewalk Citizen, in creating a warm and inviting gathering place in the historic former mattress factory overlooking the river.

BREW METHODS & EQUIPMENT

Our HQ cafe is designed to offer a unique customer experience. Customers order directly from their barista and their drinks are made right in front of them. To facilitate this direct interaction, we have a beautiful Modbar setup. We have four Modbar espresso modules and two steam modules divided into two stations. In the spirit of “if it ain’t broke make it better”, Phil worked with Modbar creator Aric to customize the software for the espresso units, in order to further control their pressure. In addition to the Modbar setup, we offer batch brewed coffee on our Fetco brewers and we also offer by-the-cup brewing on Aeropress ground on our EK43 grinder. To squeeze out even more flavour, we even mix custom water for our Aeropress coffees everyday!

FOOD AT THE SIMMONS

In the spirit of collaboration, we’ve opted to work with our two great Simmons partners Charbar and Sidewalk Citizen Bakery to create our food program. In our pastry case, we offer baking by Sidewalk and later in the day we offer a small menu curated by Charbar. We encourage you to visit Sidewalk's counter-service for a full selection of pastries and amazing Middle-eastern inspired hot breakfast and lunch items, or sit down at Charbar to spoil yourself with their Argentine cuisine.

 

ROASTING FACILITY

In the summer of 2017, we moved on entire roasting facility from a warehouse in East Inglewood to the historic Simmonsbuilding. The purpose of this move was to put our operation right in front of the public, in order to draw our guests into the process and get them excited about our innovative approach to coffee. The centrepiece of our new operation is our custom-built 45kg coffee roaster. It took Phil almost 3 years to design and build this vintage machine from the old body of a German-made 1961 Probat G45. Phil used the original drum and cooling tray but, leveraging his engineering background, he redesigned and built the combustion system (burner), electrical system (motors, etc), venting system, and the control electronics.     You can find their coffee across Canada, but here at their flagship location you may meet Phil and or Seb, or watch them roast beans.
    Known for sourcing great quality beans, and meeting with those farmers, checking out their land and ensuring highest quality, they bring all this attention to detail with this location.
    Friendlier service than many other coffee shops, they will cater to your needs.

    A place of solace during rainy days and snowey evenings, Phil and Sebastian serves as a hearth for couples, dates, co-workers and the like with their wide tables and array of seats.

    Their coffee, per usual is always brewed well, and while I’m not too fond of their pastry selection, their coffee, specialties, and teas are all that you need to make your day a little more vibrant.

    The Phil & Sebastian location at the Simmon’s building is my favourite location for a coffee or hot cocoa in the city. The Simmon’s building can be a bit hectic on the weekends though so best to go weekdays instead. Seating is large shared tables so the space is great for small group meetings or studying. Also they are right next door to Sidewalk Citizen so it’s easy to get an amazing pastry!

    Chill warehouse atmosphere, with great food and beverages. Spent a relaxing Sunday here. There is an elevator inside, washrooms are on second and basement floors.
    Patio and rooftop are closed for winter, of course.
